1) Chris Yim

Why you would like this position?

I am interested in becoming the President of UBC Food Science Club because I am passionate in coordinating social events and tours for members. I also hope to strengthen my leadership skills from planning for activities with a team of enthusiastic committee members.

While completing my Food Science Degree in year 2013/14, I hope to meet more people who are also interested in food science. I look forward to contribute to the food science community and broaden my network through being part of the executive team of the Food Science Club.

Experience: In order to help the team organize successful workshops and tours, I hope to bring my event planning skills acquired from being part of the past executive team of two other clubs (HKSA and Food Society) to the table. Together with my leadership and organizational skills gained from my Coop work experience (a cherry packing plant and a nutraceutical laboratory), I am competent to share the duties with the President and providing my utmost assistance to the team.

Envision: I hope to help spread the knowledge in food science and awareness of food safety to more students through workshops and blog/ newsletters updates.

Your major: Food Science, 4th Year

Your favourite UBC Food Science Club event and why:
Charlie Chocolate Factory tour, because I have had the opportunity to learn more about the processing of chocolate from cocoa mass to different shape and refinement of chocolate products.

Possible ideas for 2013/2014:
Keep all the fun, popular workshops and tours form last year! A molecular gastronomy workshop; tour at a potato chips factory; tour at a supplement manufacturing plant; tour at Mission Hill Winery or other wineries; a new layout for the club webpage.

2) Winnie Lee

Why you would like this position:

As a current Coop student at the R&D department of Saputo, an international dairy processing company, I would like to share my passion and knowledge in food science and my experience from the food industry with the club members. As well, I enjoy planning and attending many more fun plant tours and workshops using my strong organizational skills. In addition, this opportunity would allow me to polish my leadership skills and run the club that I love.

Your major: Food Science Major (4th year)

Your favourite UBC Food Science Club event and why: Candy and Caramel workshop during last last year. They were very fun to make, I witnessed the caramelization and Maillard browning reactions right before my eyes! If there was no time conflict between Purdy’s tours and my lectures, Purdy’s tour would have been my favourite. Hopefully I’ll get to attend one this year!

Possible ideas for 2013/2014

- Invite professional speaker(s) and senior Food Science undergraduates/graduates to a Speakers’ Night at UBC to talk about career options in the Food Science field and answer any questions from the audience regarding Food Science education.

Vice-President

I’d like to be the secretary so that I can help arrange the exciting tours we will have, and also to inform our members about the upcoming events. I also enjoy taking pictures for the events and tours :)

Your major: 4th Biology Major

Your favourite UBC Food Science Club event and why: My favorite event is the Purdy’s Chocolate Factory Tour!
I would like to apply for Public Relations since it acts as the bridge between club members and executives, allowing executives to hear from the members’ opinion. It is also a fun position since PR is responsible for making posters, which is the essential tool in attracting members and non-members to join our tours and workshops.

Your major: Food and Nutritional Sciences

Your favourite UBC Food Science Club event and why: My favorite UBC Food Science event was Chocolate Tempering since I got to make glossy chocolate and shared with my friends on Valentine’s Day!

Possible ideas for 2013/2014

- Plant tour to Lulu Island Winery

- Work with UBC farm and arrange cheese making workshops

- Organize more chocolate factory plant tours and chocolate making workshops since everyone loves chocolate!

- Encourage members to read food science related blogs

2) Wen Wen (Carmen) Chu

I was the Publicity Director of Malaysia Singapore Night 2011, and I enjoyed all duties that my position has entailed, so I couldn’t see why I wouldn’t enjoy taking up this position in this club. Workshop planning would also enhance my leadership and organizational skills.

Your major: Food and Nutritional Sciences (Year 5 in coming year)

Your favourite UBC Food Science Club event and why: Candy making and the tours, hands-on learning on how one of your favourite food is being made is indeed fascinating. The tours were very informative and insightful

Possible ideas for 2013/2014

Our first trip to the Lucerne Milk Plant was on November 30 and ended with chocolate milk satisfying our thirst. We even got to take some home! We would like to THANK Denis and Danny for letting us come visit them and taking the time to show us around they were very welcoming, but also willing and able to answer all our questions. We were able to see first hand how all the machines are controlled, how they maintain quality in order to meet standards, where raw milk is brought in and stored, how different ingredients are added and we learned about homogenization, HTST, and double heat exchangers. We also saw how plastic milk jugs are made, filled, and stored. In addition, we saw how cartons are formed, filled, and sealed. Since it is almost Christmas we also learned how egg nog is made. Happy Holidays everyone!

Members learned a little bit about the science behind candy making and the chemical process of caramelization. In this workshop salted caramel sauce and peanut brittle were prepared. Students mixed cooked caramel with whipping cream and added a little salt to counter the sweetness of the sugar in the caramel sauce. Cooking past the ‘hard ball’ candy stage and adding peanuts allowed members to prepare a crispy peanut brittle. Caramel sauce can be used as an ice cream topping, coffee flavoring, or as a fruit dip! Homemade caramel sauce and peanut brittle are also great holiday gift ideas! Thank you to everyone who showed up and had so much fun with us!

Caramel & Brittle Making Workshop

Our first workshop this year is caramel sauce and brittle making!

They are very sustainable and are quite involved in community events. Ethical Bean was the first coffee company to introduce QR tracking on their products. You can find out where the coffee beans originated from and even facts about the roaster! We also learned about the one way valves on the back of the packing which allows for fumes to be vented out while not allowing oxygen to enter. This keeps the coffee grounds or beans fresh and prevents the package from bulging, so check for the valve in the coffee you buy next time. In terms of processing we got to see the roaster and how beans are weighed, staged, roasted, cooled, how non-bean objects are removed, and then final weighing. This process has very little waste as most losses in weight are due to moisture removal during roasting. The roasting process takes around 14-16 mins depending on the desired roast, ranging from lush, bold, classic, exotic, decaf and to rocket fuel. We also got to see how they select beans to buy, from the physical inspection, small scale roasting to the use of UV light!

Purdy's Chocolate Factory Tour

This year we held our first tour at Purdy’s Chocolate Factory on Kingsway. Due to its always popular demand we held two tours on October 3 and 4th. After signing in and suiting up we were able to walk through the factory to see the production process. From nut roasting, fudge making, coating the bottoms of chocolates, cooling, hand packaging, and machine wrapping, students were able to see it all firsthand. We hope you enjoyed seeing how your chocolates were made and of course tasting them at the end of the tour.

http://www.youtube.com/watch?v=aTcW1rwzrLc

2012 ICE BREAKER!!!

Our icebreaker is coming up!!!! This day is filled with not only information and orientations about programs on campus, but also games, music, and an overview of the different diversity of clubs UBC has to offer.

Come and stop by our table near the Kaiser building on September 6th 2011 to see what food science is all about. We will be giving out freeze dried ice-cream to those who answer correctly to a food science related trivia question!

What a fantastic workshop! Thank you to everyone who participated in this dynamic hour and a half. And a big shout out to facilitators Reena Mistry and Kimberley Rawes for providing tons of doable techniques and information, from identifying your networking goals and the different contexts in which to network, to introducing yourself to strangers to name tag placement. It was a great motivator and confidence booster. Don’t forget that interacting with your profs and peers at school is networking too—keep practicing!
